Jicama

Jicama is a root vegetable which is sometimes called a “Mexican Sweet Potato.” It is high in vitamin C, vitamin B6, iron, and potassium.

Once peeled, it reveals a sweet juicy flesh that resembles the taste and texture of apples. Jicama is grown in the Hippocrates Organic Garden and is used in our kitchen for the benefit of our guests. It’s taste and texture make it excellent eaten raw. Here is a quick and easy recipe:

Jicama Fries

1 medium jicama (about one pound) peeled and cut into Texas-sized fries

1 Tablespoon extra-virgin olive oil

1 Tablespoon paprika

1 teaspoon onion powder

1 teaspoon chili powder

2 teaspoons dulse flakes

Place all ingredients in a large bowl and toss until well blended. Enjoy!
