Lovin’ Kale Beet Salad

Kids love bright and sweet beets! Try our Lovin’ Kale Beet Salad for a tasty plate of greens that everyone will enjoy.

Ingredients:

2 Bunches Lacinato Kale, Thinly Sliced

3 Large Beets, Shredded

Dressing:

4 Oz. Lemon Juice                               

½ Small Slice of Ginger                      

4 Oz. Sesame Oil

1/8 T. Cayenne

¾ Clove of Garlic                                                                                

½ T. Kelp

½ C. Sauerkraut

¼ Bunch of Dill                                              

1. Process dressing ingredients in high speed blender.
2. Massage dressing into kale until soft.
3. Mix in beets.
4. Let marinade for at least a couple of hours.
5. Enjoy!
