All are richer than broccoli in beta carotene, which seems to offer protection against cancer and cataracts. The largest amount of beta carotene is found in green germinating seeds such as alfalfa, sunflower greens, etc.

The carotene nutrient is an antioxidant that neutralizes the free radicals that damage cells and contribute to cancer, scientists at the University of California in Berkeley report.

Many animal studies and more than 70 human studies suggest that this nutrient enhances the immune system and wards off tumors- particularly lung cancer and melanoma.

Paul Lachance, professor of food science at Rutgers University, calculates that Americans should consume two to four times more carotene than they do now- about 5 to 6 milligrams a day. That’s a carrot a day.

For the time being, you’re better off getting this nutrient from foods than from carotene supplements because scientists suspect cancer protection also may be provided by other nutrients in these foods.
