Soak hulled buckwheat (groats) in three times as much water as buckwheat for one hour.
Pour into a colander and rinse it once an hour until it is no longer glutinous (the water should run clear) and the grains do not stick together.
Leave the buckwheat to sprout overnight.
The next day, place the buckwheat grains in a dehydrator at 107 degrees F and dehydrate 8-12 hours.
