Raw Vegan Cherry Cobbler
Ingredients
- Filling Ingredients:
- 2 cups of pitted cherries
- 1 ounce of water
- 1 pinch of cinnamon
- 1 teaspoon of psyllium husk powder
- 1⁄4 teaspoon of vanilla
- 4 drops of fresh lemon juice, or to taste
- Topping Ingredients:
- 1⁄2 cup of chopped almonds
- 1⁄3 cup of date paste (pitted dates processed until smooth)
- A splash of vanilla
Method
- 1. Cut 1 cup of pitted cherries into thirds and set aside
- 2. Blend the remaining filling ingredients
- 3. Fold in the remaining cup of pitted cherries
- 4. Scoop the cherry filling into the dessert bowl
- 5. Press pieces of the topping between your fingers and scatter the pieces on top of the cherry filling
